Mango and Ginger Glazed Chickpeas


I have been trying to give up sugar for the past year with mixed results. I always get a good start, but then school, work, stress, life etc. intervene and I turn to sugar to cope. Watching the documentary Sugar Coated while eating a chocolate bar gave me that extra push I needed to finally give it up. I've been trying to incorporate sweetness into my diet without adding extra or processed sugars. 

After I realized how much protein was packed into chickpeas I have been trying out new ways to incorporate them into my diet. Today I decided try something different and cook the chickpeas with a mango chutney glaze instead of my usual spicy curry. The results were sweet, buttery and super filling. This recipe is definitly going to be a new staple. 

Mango and Ginger Glazed Chickpeas

  • a can of chickpeas
  • ghee
  • sharwood's mango and ginger chutney
  • ginger powder
  • cinnamon
  • cardamom 
  • garlic powder 
  • pepper
  • Moroccan seasoning
  • chopped cucumber 

Heat a large pan on medium and add ghee. Drain can of chickpeas and add to pan, stir until coated in ghee. Add pepper, cinnamon, cardamom, garlic powder and Moroccan seasoning and stir for 3 minutes. Add in 3 tablespoons of mango chutney and stir until the chickpeas are coated. Continue to stir until they reach a golden brown color. 

Serve with fresh cucumber on top!
